Broccoli Parmesan Meatball Recipe

This weekend I was thinking about what dish I could make that was hearty, yet also healthy. I decided to share with you all one of my all-time favorite new recipes--the Broccoli Parmesan "Meatballs." It is surprisingly SO simple, AND boyfriend approved (he is a meat eater).

SO, let's talk ingredients. I love how you probably have all of these already and don't even know it. You don't need to take a trip to the market--easy peasy.

You will need:

1/2 cup raw almonds
1 large head of broccoli (about 2 cups chopped, steamed)
1/2 cup parmesan cheese
2 cloves garlic, minced
Salt and pepper
1 egg
Olive oil spray

First Step:
After you have chopped and steamed the broccoli, set aside to cool. Measure out 1/2 cup raw almonds. I use 2 of these on-the-go packets that you can get at Trader Joe's or anywhere really. Place almonds in a food processor (I use the amazing Nutri Bullet) and pulse until they are ground into a powder. Make sure you do not overdo OR under mix them. See picture below for what it should look like.

NEXT: Combine the 1/2 cup parmesan, salt and pepper to taste, 2 cloves minced garlic, and egg to a mixing bowl, and stir the ingredients together. In the meantime, put the broccoli into the food processor and mix it up! It should have the consistency of baby food or a little thicker. I actually kept it in for too long, but I'd rather have that than chunks of broccoli!

After all the ingredients are mixed together, this is when you start shaping them into "meatballs," about the size of a spoon. They are not going to stick together perfectly, so just form them so they can fit in a muffin pan.

Be sure to spray the pan ahead of time and preheat the over to 350 degrees--maybe a little hotter depending on your oven type.

The recipe makes 12 "meatballs," all a little bigger than a tablespoon.

Bake the "meatballs" in the preheated oven for 25 minutes. Every time I've made these, the time has varied. I recommend setting a timer for 20 minutes, and then keep checking back after 5 minutes. Since these are made up of almonds and parmesan, they are not going to get super crispy or look well done. After about 25-30 minutes, take a fork and gently lift up one of them and see if the bottom is a light brown, and slice the ball to see if it's still "squishy" or not. I prefer mine cooked closer to 35 minutes because I like them crispier on the outside.

After removing them from the oven, I recommend putting them over pasta, spaghetti squash, or putting them in a sandwich!! I love drizzling them with sriracha and of course, marinara! Enjoy!!

My Story

Hi Fitfam!

I know I haven't blogged since finishing my 3 Day Refresh, and I was thinking today that I haven't actually shared with you all what brought me here. What exactly brought me to coaching? Well, a lifetime of no confidence and zero self-esteem. I will let the video do the talking (literally), but I did think it was time to be vulnerable. The only way to grow is go outside your comfort zone, and I really did here.

I want you to know what brought me to become a coach, and why I love Beachbody just so so much. I could've kept going on and on and on, but I'm sure you don't want to keep listening to that long of a video! SO, since I broke the ice and got personal, I'd love to know YOUR story, YOUR why, and what lead you to follow your dream.

3 Day Refresh

Hey everyone! I haven't written a new blog for a while, so I thought I would give you an overview of what I've been doing the last couple of days!

I've gotten a lot of questions about what the 3 Day Refresh is, so I will post my video below of the overview :)

I love how this non-starvation, vegan cleanse is only 3 days! You have 3 days to reset your body and get back on the path to clean eating. This is my second time doing it, and it is much easier. I'll be completely honest and say that the first time was definitely difficult. I only lost under a pound, and I ended up cheating on it a little the last day.

I am so not a cleanse person. I tried to do a 3 day juice cleanse, and it was just not for me. I love juicing with fruits and some veggies, but the recipes for the juice cleanse were SO hard for me to drink. I ended up drinking all the juice for the day, but adding in some clean food as well. The great thing about the 3 Day Refresh is that it is all set up for you, day by day, hour by hour. I set alarms for every time I have to eat/drink next. I will write out today's eating schedule for today (I'm a late riser):

8:30am: Wake up, chug 8oz of filtered water (I keep my huge water bottle by my bed)

9:00am: Shakeology (vegan chocolate) blended with 10oz water and half a banana (first fruit serving of the day)

**optional herbal tea one hour after this, but I skipped it

10:30ish: (I tried to space out my meals more today) Fiber Sweep: this is a packet you put in water, mix it and chug it down fast! It will clump if you don't drink it immediately. It tastes like lemon and isn't hard to get down.

12ish: Lunch is a Vanilla Fresh shake blended with water and another serving of fruit. I will probably do blueberries today! I also get to have 1 serving of veggies and 1 healthy fat (I will have hummus and carrots)

1:30: Afternoon snack is another serving of veggies and a healthy fat (or juice option!). I usually have 1 tsp coconut oil and some baby carrots again because you don't have to prep anything

3: herbal tea (I enjoy green)

3-5: chug a ton of water and get a walk or Yoga in!

5: Dinner: Vanilla Fresh Shake with water and ice (no more fruit), and 1 serving from the dinner list. So tonight I will be having Coconut steamed veggies: steamed broccoli and cauliflower with sea salt and coconut oil

6-8: chug water, and have optional tea again before bed!


My introduction video explains the meals in more detail, and I have all 3 days documented from my first round as well. Again, this has been a more successful round (lost 1.2 pounds after Day 1!) and I haven't cheated, nor wanted to, at all!

Sunday Funday!

Happy Sunday Fitfam!!

I had such a fun day today with one my coaches/friend on Team High Voltage. We did a PiYo strength interval class, caught up, and then took some awesome fitness pictures! I absolutely love how Team Beachbody is bringing me closer to friends I've lost touch with and helping me put myself out there more.

This summer I have truly found my passion, and I am more than excited to share it with others! It means the world to me that anyone would find my posts and story inspiring, and I find it even more amazing when I help others to transform their lives.

I invite everyone to do something this week that is so out of your comfort zone that it makes you nervous! Seriously though, this can be such a confidence boost.

So...what will it be? :)

My Turbo Fire Transformation

Hey everyone!



I thought I would share with you all my five month transformation with my soulmate workout, Turbo Fire. This is my first blog and I'm very excited to be able to write freely, with no caption limit! LOL :)

Turbo Fire has completely transformed my life for the better, and it's what made me want to become a Beachbody coach--I was already coaching and I didn't know it!
