Cheat Clean--Vegetarian Style

Did you Know...

Vegetarians can be super unhealthy?! #duh

When I became a vegetarian over a decade ago, I only binged on carbs, carbs, sugar . . . and more carbs. It's taken me a 2-year trial as a vegan and about 5 more years as a carbatarian to understand that what I was eating was NOT making me feel good at ALL!

So what did I do? I started eating veggies! My secret...spices :)
My biggest problem with vegetarian food was the blandness, but obviously I was cooking tofu and veggies all wrong. 

I wanted to share some of my favorite cheat clean vegetarian snacks and some delicious heavy foods that can be made healthy with only a few, cheap ingredients!

Let's start with breakfast...

These protein pancakes only have a few ingredients in them, are protein-packed, and drizzled with melted hazelnut butter and berries. Can you say NOM?! 

▶️ 1 egg, 2 egg whites

▶️ 1/4 cup instant oatmeal (blend in a magic bullet)

▶️ 2 tbsp water

▶️ 1 scoop protein powder

*yields 3 smallish pancakes

On to the yummy snacks/small meals!


I'm obsessed with Pizza!! (who isn't?) SO, this was basically my diet off and on forever...Lean cuisine pizzas were healthy right? Absolutely not. I found this recipe in my Insanity meal plan and I made these whenever I was craving my fave carb food :)▶️ 1 whole wheat English muffin, sliced▶️ Couple spoonfuls of your favorite/healthiest marinara or pizza sauce▶️ Couple pinches of low skim mozzarella, sriracha drizzle optional :)▶️ Bake in the oven until melted and crispy! DELISH



vegetarian ratatouille

Ratatouille is one my favorite heartiest meals!! I usually make this in a casserole dish, and it's a great idea for your family to have throughout the week. You can definitely use spaghetti squash instead of whole wheat penne, but this makes it heavier.

▶️ Whole Wheat Penne, spaghetti squash, or ravioli

▶️ Zucchini, onion, bell pepper 

▶️ Dried basil, dried parsley, diced tomatoes

▶️ Mozzarella Cheese

▶️ 5 cloves garlic

Saute all veggies, add in spices, tomatoes, cook pasta according to directions, poor in casserole dish in layers: pasta, then veggies, then sprinkle cheese and bake for 20 minutes at 350! Simple, quick, and SO good!!

Don't you love those Thanksgiving Mashed potatoes? I love how quick and simple this recipe is, with ZERO guilt--yet you're still satisfied! I love having this with broccoli too :) There are only 3 ingredients:


▶️ Cauliflower, boiled until soft

▶️ Vegetable Broth

▶️ Greek Yogurt (optional for it to taste like sour cream)

▶️I also add a little garlic powder and salt

All I did was blend these ingredients together in my Nutri Bullet, and dinner was served!

If Protein Pizza Muffins just won't do it...try these AMAZING Pita Pizzas!! I discovered this recipe out of a huge pizza craving and lack of a car, and it's my new FAVE!!

▶️ One 100 Calorie Whole Wheat Pita Pocket

▶️ Shredded Pepperjack cheese (spicier the better!)

▶️ Pizza sauce, a little pesto

▶️ Stuff with any pizza toppings: I had Pineapple, black olives, and jalapeƱos 

Ok so this isn't exactly the cleanest "cheat meal," but if you have a Trader Joes near you, it's very inexpensive, you can use one Pita for two people, and it's much better than calling up the delivery man. 

I do this all by sight and smell. I bake it at 400 on foil for about 15-20 minutes, but I love it crispy! If you pinch the pita together before putting it in the oven, the more likely the inside will get nice and bubbly! Best #treatmeal ever!

On to Dessert!!

I don't know about you, but I used to LOVE ice cream. But my 2 year veganism venture made my body unable to handle vast amounts of dairy, so I found this AHmazing quick recipe and had to share!
Banana ice cream?! Also known as "nice cream," this dish is made up entirely of bananas! All I do to prep is freeze a few banana halves over night, then the following night after indulging in some pita pizzas or ratatouille, I get out my nutri bullet and these other delish toppings:

▶️ Frozen banana halves (about 2 bananas total)

▶️ 1 cup almond milk or whatever you prefer

▶️ Blend that, and you can add vanilla flavoring, chocolate chips, fruit, etc to make a different flavor!

▶️ Toppings: hazlenut granola and melted hazlenut butter



Perfect way to end a Cheat Clean Night--Vegetarian Style!
