21 Day Fix Vegetarian Stirfry

This was absolutely delicious!! This is a clean-eating vegetarian meal that is all portioned out so you can enjoy it on the 21 Day Fix meal plan :)

21 Day Fix Vegetarian Meal

I love how simple this recipe is--there are only a few ingredients, and I made about 3 servings with it.

It involves:

*1 package extra firm cubed tofu
*2 servings brown rice
*1/4 cup Hoisin sauce
*2 tbsp Soy sauce
*1 small red bell pepper
*1/2 white onion
*2 tbsp olive oil 
*Any additional veggies you'd like :)

This is 1 red container for the tofu, 1 green for the pepper/onion (could be 2 or more depending on what veggies you add), 2 yellow (depending on how much rice you use in a serving), and the sauce is free!

First drain the tofu between paper towels. I usually put heavy objects like a frying pan on top for about 10 minutes. Then combine the hoisin sauce, soy sauce, and tofu in a bowl. Mix together, cover with saran wrap and marinate in the fridge for about 30 minutes.

I used this time to cook the brown rice, and chop my veggies! After the 30 minutes, put about 2 tbsp olive oil in frying pan, and lay out the tofu flat. Cook for about 5-10 minutes, depending on how crispy you want it to be!

Add the veggies and cook for about 5 more minutes, stirring off and on. I added garlic powder and cayenne pepper at this time for an extra kick!

If you want to meal prep with this, lay out your containers, put the rice on the bottom, and scoop up the amazing deliciousness on top!

Prepped for the next few days, and all portioned out! I will probably add broccoli next time :)

  2. I'm also wondering that with 1/4 cup hoisin (sugar) and 2 TBSP oil.
