Day 21 of the Ultimate Reset!

IT'S HERE!!! Day 21 has arrived!!
I tried to treat this like any other day, but every time I took a supplement, or my last packet of Alkalinize, I had to announce out loud (to myself) that it was my LAST dose ever, lol! The recipes weren't too great today and I was very low on fruits and veggies, but I still made it work!

clean eating

To start my LAST day of the Ultimate Reset, I had some strawberries and honeydew (so low on berries today, lol!)

plant based lifestyle

Lunch was basically a combination of the veggies I had leftover! It was field greens, some baby heirloom tomatoes, cucumber, and miso dressing! I made it as hearty as possible, but it was less than my usual serving.

After lunch, I got in my PiYo: Define Lower class which is one of my faves! I actually burned almost DOUBLE the calories I usually burn! I was thinking to myself that something must be off, but I was crushing the class! I noticed I was SO much more flexible, could go deeper into the poses, hold them longer, and burn more calories/have a better workout because of this!

I had my last packet of Alkalinize and I thought I'd be super excited, but it's really not that bad. It's like having a shot of wheatgrass a day, and I like the boost of green energy! I might have to continue with this supplement :)

For my snack, I had some chocolate vegan shakeology blended with distilled water (almost out of this--can't believe I've gone through about 2 gallons a day!).

easy vegan recipe

Dinner Part 1 was baked asparagus with olive oil and sea salt. This is so easy and I usually bake them for about 30 minutes because I like them a little crisp!

This soup was insanely easy to make! It is an Avocado-Cucumber soup that yields SO much!! In the meal plan it says this is 1 serving, but it's more like 8, lol! Basically, you chop up 1 cucumber (peeled, which I forgot to do) and 1 medium rip avocado. Put it in a nutri bullet with some fresh lime juice, salt, 1/4 small jalapeƱo (optional), and about a cup of water. You blend it, and you're done! All raw food in soup form! Now...I couldn't handle it. I couldn't taste the avocado--it just tasted like a thick cucumber paste to me. But, it was super refreshing for that matter and I think if it was a smaller serving with less cucumber I would be able to eat more!

Overall, my LAST day went over very well and I'm proud to say I haven't cheated ONCE!

Did I want to give up some days? Absolutely. Did I? Absolutely not. Willpower is a muscle you have to work just like any muscle in your body. You have to push your limits, get stronger, and squash your excuses with crazy motivation .There were some days I was super hangry. There were some days I was more tired than others. There were some days where I didn't prep well enough and I didn't have some ingredients. Did I let that get me down? No, I pushed through. This has been the biggest test of my willpower, dedication, and I'm pretty damn proud of myself for never slipping up. Never, not once. The results I've seen are unlike ANY program I've EVER done. I've been doing yoga everyday by the way, nothing extreme since my body is in detox mode.

When I only focus on my nutrition, it's insane how much better I feel. Imagine if I ate this clean while on an extreme workout program! So that's definitely what I'll be doing come beginning of May. I have to ease my body back into extreme mode, so you'll be seeing some different workouts, recipes, and lots more in the future!

Do you think you could go 21 days without alcohol, chocolate, meat, dairy, and crappy food?? I'd love to hear from you if you think you are ready to completely REDEFINE and RESET your nutrition. Seriously, I think about foods SO differently now! Full review to come :)

Thank you so much for following me on this amazing and life-changing journey! If you're ready to take your health to the next level, shoot me an email at laurenmchugh14@gmail.com :)
It's time to get serious!

Day 20 of the Ultimate Reset

One.More.Day. I can't believe it's almost over!! It seems like yesterday I was going to Whole Foods with my giant grocery list that is provided for me for each phase. I walked around aimlessly looking for ingredients, when they were actually pretty easy to find! I'll be doing a full review of this cleanse when it's over, but I actually saved money by meal prepping, not going out on the weekends, not spending money on crap food and alcohol, and really just being healthy.

vegan recipe

This morning began with my usual fruit. I had to get up early to go to a healthy market nearby to get organic fruit since I was out, and the honeydew wasn't super ripe, but still good!

clean eating

Lunch was my usual micro green salad with cucumber, carrots, red bell pepper, baby heirloom tomatoes, broccoli, and some avocado. I put my miso dressing on top and it was amazing! To see the recipe and portion sizes, check out my Day 19 post! :)

Dinner was the Asian Stir-Fry from the meal plan and I accidentally burned some of the veggies, but it was still delicious! (I kind of like them almost burned anyways, lol!) I just put a tablespoon of coconut oil in a pan, cooked some minced garlic (make sure it's not on too high!), added carrots, broccoli, and then the red bell pepper until they looked done. After, I put some sesame oil and liquid aminos on top!

Overall, I am so ready to be on my last day! I have exactly 2 gallons of distilled water left and I plan on downing them tomorrow! I can't wait to share with you all my results--stay tuned! :)

Day 19 of the Ultimate Reset

Today was a great day! I woke up with one thing on my mind: 2.days.left.

Only 2 more full days and then I can say that I accomplished the hardest program of my life--yet the MOST effective because my nutrition has always gotten the WORST of me! It was time to buckle down and see what foods my body needed, and obviously a vegan diet has significantly changed my body, mindset, and lifestyle. I know that after this cleanse is over, I will still be eating a vegan diet 90% of the time. Yes, I'll indulge every now and then but I feel amazing for the first time EVER and I cannot and will not give that up! :)

Breakfast was, of course, my fruit plate. This is the breakfast every morning on Phase 3.

This is the best vegan salad on this cleanse. It's simply amazing.
This has been my lunch every single day for the past 3 weeks. I had to add some cabbage to my field greens and I put avocado on top (with a baked sweet potato on the side), but it's so filling and absolutely delicious!! My Miso dressing will definitely be made in bulk from now on because it's my absolute favorite.

What's in this beautiful veggie bounty?
➡️ Field greens/cabbage
➡️ 1/4 cucumber
➡️ Orange baby heirloom tomatoes
➡️ 1/4 red bell pepper
➡️ little bit of shredded broccoli
➡️ 1/4 avocado
➡️ 1/2 carrot
➡️ Miso dressing: 2 tbsp miso paste, 1/4 cup rice vinegar, 1 tbsp liquid aminos, 1/4 cup sesame oil, 1/4 cup water blended in a nutri bullet (makes about 8 servings of 2 tbsp each) ➡️➡️ Try this!!!

For exercise today, I went on a long walk in nature with my boyfriend. I love getting out in nature on this cleanse and getting some sun on my skin!

Dinner was supposed to be Roasted Beets and Tempeh with coconut collard greens...I just couldn't. I think you all know by now how I feel about Tempeh, and beets for that matter. SO, I recreated the garlic veggies dinner! This was AMAZING!! Love love love all the veggie goodness! :)

Another success on Day 19!! :)

Day 18 of the Ultimate Reset

Day 18 of the Ultimate Reset, complete!! Today was tough because there was a fun community event happening and I couldn't attend for many reasons: there was too much food temptation, I would have to bring like a gallon of distilled water, my packet of supplements, I wouldn't be able to eat, and I'd have to have timers on my phone...not exactly a party animal today, lol! So this was pretty tough, but instead I woke up, got my yoga and fruit in, and then worked! Yes, it's difficult being on a cleanse and having to turn down events, holidays, or going out...but I know I'll regret it if I do go and then end up splurging or just not having fun because I'm anxious the whole time about when I need to take my supplements, needing to prep for lunch, etc.

I love love love berries mixed with melon! It's beyond refreshing and I'll probably have to continue having some fruit every morning :)

Lunch was a delicious spinach salad, with Miso dressing, yummy baby heirloom tomatoes, cucumber, and 1/4 avocado--NOM!

For my snack, I had 1/2 scoop Chocolate Vegan Shakeology and then a small green apple--I always look forward to this time of day, it's like my pick me up!

Dinner was something I've never tried in my life, and I didn't even know it existed...Roasted Fennel Bulb. What! I know it sounds disgusting, BUT it was actually kind of good! Fun fact: it tasted like crunchy licorice and looked like onion rings!
I also had a side of Asparagus and Broccoli--super filling!

Roasted Fennel Bulb:
Preheat oven to 350. Combine fennel with 1 tbsp olive oil and salt in a small bowl; mix well. Arrange the fennel "rings" in a single layer on a baking sheet (you cut it like an onion, but with the green sections off). Bake for about 30 minutes, or until golden and tender.

For the side of veggies, I just boiled distilled water, and had asparagus, broccoli, and drizzled them with olive oil and sea salt.

Day 18 was a success overall! I'm trying new foods for the first time ever and I'm pleasantly surprised with the recipes! :)

Day 17 of the Ultimate Reset

Day 17 started off strong, but between breakfast and lunch, I got a headache that hasn't seemed to go away. I'm not sure I'm eating enough with the substitutions I'm doing, so I went and got more veggies today so I could be more prepared!

Breakfast was this natural beauty of a fruit salad!

Lunch was supposed to be a Moroccan Carrot Salad but I didn't like the ingredients in it (lots of vinegars), so I had my giant micro green salad with avocado instead :) I probably should have had more veggies, but I didn't go to the store until after.

For my snack, I had my 1/2 scoop Vegan Chocolate Shakeology and a small green apple! I didn't have time to get my yoga in today, but I'll definitely be doing the 21 Day Fix Yoga Tomorrow! :) I always look forward to that time everyday where I wind down and work on my balance and flexibility. It really helps with my stress and anxiety as well!

Dinner was Roasted Squash with a side of broccoli! The squash has 1 tbsp olive oil and 1/2 tsp liquid aminos drizzled on top! It was pretty good!

Overall, today I had a headache throughout day and I think I'm not eating enough. I definitely need to look at the serving sizes better because I want to be able to get through this phase strong!

If you have any questions regarding this 21 Day Ultimate Reset, please feel free to email me at laurenmchugh14@gmail.com :)

Day 16 of the Ultimate Reset

Today was day 2 of Phase 3: Restore! Not much to report today, it's pretty basic this week and I love the meals so far! Yes, the portions are smaller and it's just fruits and veggies, but I still feel full after every meal. It's night time when I start getting hungry, but that's always when I would snack.

vegan breakfast

No longer! This morning (and every morning--which I so don't mind) I had my fruit plate. Honeydew is definitely one of my favorite fruits now--it's so juicy and goes great with all the berries!!

vegan salad lunch

Lunch was my micro green salad, and since I didn't have a ton of veggies to put it in, I added the avocado on top (same as yesterday and I didn't want it to go bad). Again, stuck to my miso dressing since I had it prepped, and super yummy and filling! :)

For my snack, I had 1/2 scoop Chocolate Vegan Shakeology and then a small green apple. Between my snack and dinner, I did the recovery workout from Insanity Max: 30 called Pulse. It's just 20 minutes but you definitely break a sweat!!

Dinner was supposed to be Curried Cauliflower. It sounds more fancy that it actually is, lol! It's just baked cauliflower, olive oil, and curry powder!

vegan cauliflower recipe

However, I thought I had curry powder and I didn't, so I baked some cauliflower with olive oil, garlic, and a little cayenne and had this instead! It was actually really good AND filling, surprisingly!

Overall, great day today and I lost another pound! I've lost 8 pounds total so far! This is definitely the motivation I need to finish this cleanse strong! :)

Day 15 of the Ultimate Rest

Today is Day 1 of the LAST phase of the Ultimate Reset! Phase 3 is called Restore, and it is made up of all fruits and veggies. There are no whole grains, and I don't have to take my detox drink 3 times a day! I'm pretty excited about that, even though it really wasn't that bad. I am just adding one more supplement in twice a day, and it's called Revitalize. This is supposed to help with the digestive tract and you take it 30 minutes before eating.

SO, down to what is super exciting for me to report...after 2 weeks of vegan food, low impact workouts, and staying on track with my supplements and water intake...I am down 7 pounds and 12 inches!! Isn't that crazy?!

Beachbody transformation

Of course, I'm so excited about my physical changes in only 2 weeks, but I've also noticed my productivity increase, my energy levels go up, I look forward to yoga everyday and being present. My skin has cleared up, my body is leaning out, and it's basically all due to clean nutrition.

So, that said, I am very excited to see how the next week goes, and I know I'll be struggling with only veggies and fruit...but I'm in this for the long haul!

Day 15 Breakfast was my fruit plate that I enjoy so much :)

Lunch was this gorgeous Asian Cabbage Salad. So, I actually went off book here (still within the guidelines) because I cannot stand the taste of rice vinegar. So instead of making this with rice vinegar, liquid aminos, and sesame oil, I just had the veggies with my Miso dressing on top. Oh, and this flipping amazing 1/4 of avocado that totally made the dish!!

- 1/2 head Napa cabbage
- 1/4 medium red onion, chopped
- 1 tbsp chopped green onion
- 1/2 chopped carrot
- 1/4 avocado
- 2 tbsp miso dressing

That's all! :) It was amazing!

In between my lunch and dinner, I had my snack of 1/2 scoop Chocolate Vegan Shakeology (you can only do 1/2 because it's less protein in this phase), and then a small green apple. Then I did PiYo: Define Upper today. I felt a little weaker than normal since I didn't get a lot of sleep last night, but I still very much enjoy this class and I did this instead of Insanity Max: 30 Pulse since I wasn't feeling up to a more intense recovery workout.

For dinner, I was so happy to see that it was a pretty hearty meal! It was a baked sweet potato with garlic veggies :)

veggie stirfry

This is only veggies, some olive oil, garlic, and I added a little cayenne for some spice. It's ridiculously easy and super delicious!

Sweet potato recipe

My side was a small baked sweet potato. I just put this directly in the oven at 450 for about 30 minutes and then I mashed it, drizzled some olive oil and sea salt and it was delicious! I liked combining the veggies with it :)

Day 14 of the Ultimate Reset

I can't believe this is my last day of Phase 2!! I've seen such amazing progress over the past week, and I've learned a lot about my body. By becoming a full vegan this entire cleanse, I've noticed that my body feels SO much better than when I was stuffing my face with white carbs and dairy. By simply ADDING more veggies and fruit into my diet, I feel fuller, with more energy, and I'm never bloated or feel weighted down. I am at my highest potential when it comes to my nutrition, and I've been significantly more productive because of it.

That said, tomorrow I will be giving a more in depth review of Phase 2: Release, but I am super proud of myself for not cheating once, for staying on track, and for going above and beyond with my planning, staying accountable for myself because I'm basically in this alone, and for sticking to a nutrition plan for the first time in my life.

ultimate reset

So, starting my day every morning with a gorgeous fruit platter has made me WANT to get up. I get excited every morning because I know I can look forward to breakfast. After I take my morning supplements, I'm so excited in the 30 minute time period that I will prep it all and just wait to go to town, lol!

For lunch, it's difficult for me to eat more than this salad. I was craving my Shakeology, so I had that before I ate my Microgreen salad. My favorite combination is the Miso Dressing with the Toasted Pumpkin seeds. It's salad heaven <3

I want to clarify, in Phases 1 & 2 you can have Vegan Shakeology for a breakfast alternative or snack option. In Phase 3, because it calls for less protein, you can have 1/2 Shakeology serving for breakfast or a snack. Therefore, starting tomorrow I will have to cut down on the serving size (which saddens me but it's only a week!).

In between my lunch and dinner, I did 21 Day Fix Extreme Yoga. This is a SUPER intense class if you're not a yogi, lol! I'm a beginner, but I can already feel my body changing and becoming more pliable. It's pretty amazing what so much yoga can do for your body and mind. I made a Yoga playlist on Spotify that I listen to during it so I can be completely present, and just focus on my breathing and going through the motions. I feel like my organizational skills, time management, and productivity have steadily increased during the past 2 weeks. My anxiety has significantly lessened as well, which is amazing :)

Ultimate Reset Phase 2

I just had to share with you my LAST packet of detox. I'm thrilled that I made it through this phase, and while the detox drink wasn't horrible, I'm pretty excited that I won't have to chug this three times a day, lol!

Vegan Recipe

Moving on to dinner! Tonight's meal was a Roasted Corn and Edamame Succotash. It is basically corn that you bake for 10 minutes (from being frozen), boiled edamame, then stir fried veggies with a little salt and rice vinegar. I highly recommend adding spices (herbal blend), and removing the vinegar entirely.

clean eating recipe

Again, I doubled the recipe so my boyfriend could have it too, so I might have put just too much in there, but it was too overpowering. If I had added some spice and removed the vinegar, it would be pretty awesome!!

Overall, my last day of Phase 2 was a success! I can't wait to share with you all my progress tomorrow! I've definitely noticed a huge change :)

Stay tuned! <3

Day 13 of the Ultimate Reset

Day 13 of the Ultimate Reset went really well! I've basically got all the times figured out in my head by now of when I need to take my supplements and how long in between.

clean eating

Breakfast was my fruit plate with: blackberries, blueberries, raspberries, strawberries, and honeydew. Of course, this was a very refreshing and delicious way to start my day! :)

vegan lifestyle

Lunch was my Microgreen salad with field greens, some spinach, broccoli, carrots, baby heirloom tomatoes, cucumber, and red bell pepper. I had my miso dressing on top! This always fills me up and I love it!

In between lunch and dinner, I did PiYo: Define Lower which as you probably know by now, is one of my all-time favorite low impact workout classes! I felt so amazing afterward, and had my snack of Chocolate Vegan Shakeology and a green apple :)

Dinner was different tonight! It took a little while to prep: it was Acorn Squash with Garlic-Tahini Filling and a side of steamed broccoli. It was supposed to be Kabocha squash but Whole Foods didn't have that and this is on the substitution list. First I sliced it into quarters (the serving size is 1/4 and you need another 1/4 for tomorrow).

vegan meals

After slicing them, I made the Tahini sauce, which was: 4 tbsp sesame tahini, 2 tsp miso paste, 1 tsp clove garlic, and 2 tsp extra virgin olive oil. I actually doubled the recipe so my boyfriend could have it too, and I blended the sauce in my nutribullet.

ultimate reset phase 2

I then put even amounts of the sauce on each of the quarters, and put them in the oven at 400 degrees for a little over 30 min (time may vary).

beachbody ultimate reset

I was really excited to try this, and the first bite was good, but the Tahini flavor was super strong. I'm not sure if it was because I doubled the recipe, but I recommend doing a smaller serving of that. The squash was delicious though, especially mixed with the plain broccoli.

All in all, I stayed strong today, and I'm looking forward to my last day of Phase 2 tomorrow!

If you have any questions about the recipes, how to purchase this cleanse, support during it, or any tips, feel free to email me at LaurenMcHugh14@gmail.com :)

The Future Is Now Coach Mentorship

Beachbody Coaching

A year ago I was a full-time college student about to graduate, with no plan as to what I wanted to do with my life. I'm sure many people can relate to this, but I had just started my health and fitness journey and I did not want a corporate job.

My weight has always fluctuated and I yo yo dieted like no other. As a vegetarian for over a decade, I basically only ate carbs. That was until I had a huge realization my last term of college that I was about to be out in the real world with no food to comfort me and I still hadn't gotten my health on track.
It was exactly a year ago that I made the leap and became an online fitness coach. No, I had no business experience or fitness and health certifications, but I had this fire in my belly to succeed at something for the first time in my life.

In the past year, I have built a business from home, without having to go through the stressful interview process and worry about getting a full-time job. I've lost over 30 pounds, gotten in the best shape of my life, and now social media, connecting with others, and helping people on their fitness journey is my full-time "job!"

If you've been stuck in a rut with your fitness, just started on your health journey, love helping others, and would like to make your own business from home, on your own schedule, I'd love to hear from you.☺️

I am putting together a mentorship with 15 women for the month of April. You will learn from me how to build your fitness business, pay it forward and help others, and no, you do not have to be a "salesperson" to become a coach. It's not about sales, it's about SHARING your journey, being that inspiration, and helping people along the way.

If you are passionate about health, fitness, helping others, and creating a life by your own design, please apply below or email me at LaurenMcHugh14@gmail.com

*This is open to U.S. and Canadian residents only, and you must be 18 and older*

I can't wait to start our conversation!

Day 12 of the Ultimate Reset

I'm halfway through the Ultimate Reset! I have not cheated once and I am feeling amazing! I've been doing this cleanse as a full vegan, so in the first phase I did not have any fish or dairy. I'm almost done with Phase 2: Release, and I can't wait to start Phase 3!

I've been grocery shopping about once a week for each phase, and I am only consuming organic veggies and fruits from Whole Foods :)

Vegetarian Meals

My breakfast this morning was, as usual, my fruit plate. I didn't have any melon left so I had more berries. I also had my Chocolate Vegan Shakeology blended with distilled water since I didn't have a big enough serving of fruit.

Clean Eating

Lunch today was my delicious MicroGreen salad with homemade Miso dressing. This has just become my usual lunch and I know I'll be implementing those delicious toasted pumpkin seeds into my diet after this cleanse too!

Easy Vegan Recipe

Alongside my giant salad, I had the Hearty Vegetable-Miso soup again! I love this soup so much! I will definitely be using this recipe again! It's so simple and actually pretty filling :)

In between lunch and dinner, I took my supplements at the right time, went to Whole Foods to stock up on Phase 3 produce (phase 3 only has fruits and veggies!). I'm pretty excited to see my results from this phase! After Whole Foods I did 21 Day Fix Yoga. This is one of my favorite classes on my workout schedule! It focus on stretches, balance, and of course, sun salutations and basic yoga poses. It's great for beginner yogis!

Vegan recipe

Ok so I'll be honest about dinner: it was supposed to be Roasted Beets, Coconut Collard Greens, and Toasted Millet. I did not even want to venture down that road, so I chose to use some extra quinoa from the other night (I want to eat it anyway since I won't need it in phase 2) and put broccoli, bell pepper, and the rest of the pinto beans on top. It was absolutely delicious, and still within the guidelines since I took another dinner from this phase and measured everything out!

If you'd like more information on this cleanse, check out my Facebook for some videos and tips!

Day 11 of the Ultimate Reset

I am officially more than halfway done with the Ultimate Reset!! 10 Days left and I'm feeling great!

Detox Week

Breakfast was allll the fruit. I love having this every morning :)

In between breakfast and lunch, I went to Safeway with my boyfriend. I needed more Distilled Water and he wanted to get some groceries for himself. As he loaded up the cart with meat, I wandered around, got my water, and ended up just staring at the Naked juices. How is it that I hardly crave anything, yet I wanted to grab that Green Machine SO badly?! Ok it sounds crazy, but that's where my head is at today, lol! I feel like everything you do that's fun on the weekends involves food and alcohol. I have not been going out because it's just too difficult.

Besides going to the park, I haven't thought of any date ideas. My boyfriend recommended going to a movie tonight and said we could bring popcorn. When I just stared at him with a frown, it hit him that I couldn't have that, lol! I might be exaggerating that there's nothing fun to do without food, but my date nights usually revolve around cooking a cheat meal together, going out for dinner, going to get a beer, having wine and watching a movie, etc! Since I eat dinner pretty late on this cleanse and everything has to be timed, I really don't foresee us going out in the next 10 days. The good news is...we are saving a ton of money by cooking from home and not going out!
If you're currently struggling with this on your cleanse too, I'd love some tips because it can be super tough.

Phase 2 Ultimate Reset

Anyways, lunch today was the same as dinner last night but I could have Avocado too!! It was the Quinoa-Lentil Pilaf and I mixed the avocado in but I should have had the avocado separately to savor it. It seriously makes everything better :) It was difficult to eat this while my boyfriend ate chips and guacamole, but at least I could have me some avocado!!

I was like, beyond stoked for my snack. I've been craving my Chocolate Vegan Shakeology like nobody's business so I had that at the appropriate time and drank it super slowly, and then had a green apple on the side. For my low impact workout of the day, I went for a nice long walk with my boyfriend. It felt great to get out in nature and go to the park, which I definitely need to be doing more!

Ultimate Reset Phase 2

I wasn't exactly looking forward to dinner tonight, but it was SO good!! This is a hearty Miso Soup with lots of veggies! I loved the green onion in it and the broth was absolutely delicious!!

Ultimate Reset

Alongside my soup, I had broccoli and red bell pepper over quinoa. It was supposed to be swiss chard, but I looked at the substitute list since I didn't have this. I'll definitely be making a trip to Whole Foods tomorrow to finish up Phase 2 of this cleanse strong! It's crazy how many veggies I'm going through but still saving money on organic ingredients...who would've thought?? ;)

Day 10 of the Ultimate Reset

Day 10 of this cleanse went really well! Today was definitely a better day than yesterday! I think it really has to do with staying busy :)

For Breakfast, I had my delicious fruit plate, and I also had my Chocolate Vegan Shakeology blended with distilled water.

Lunch was my usual Microgreen Salad with extra spinach and Miso Dressing! I seriously look forward to having this every single day, lol! I will definitely be using this recipe after my cleanse too! :)

I also had the leftover serving of my Roasted Red Pepper Bisque. I was concerned about the taste because of the overpowering ginger last night, but I think putting it in the fridge overnight made it taste better! How? I have no clue, but it was so much easier to consume, lol!

For my snack I had a medium green apple, and then for my low impact workout I was supposed to go for a walk (as my workout calendar says), but I like to do that on weekends. Therefore, I did the next day's workout which is Tai Cheng. This class actually comes with the Ultimate Reset and I was pretty hesitant to do it. I didn't have the foam roller so I missed about 5 of the 18 minutes of it, but it was interesting. I'm not used to this type of stretch class so I can't really give a great review of it.

Dinner was a Quinoa-Lentil Pilaf with a side of broccoli. I combined them and it was delicious! I needed to add some more spices, but I was pretty pleased with how it turned out :)
It was just cooked lentils, quinoa, chopped carrot, red bell pepper, and onion with several spices.

Tomorrow will be my halfway point in this cleanse and I'm staying strong!

Day 9 of the Ultimate Reset

Day 9 of the Ultimate Reset was a little harder today and I'm not sure why. I think I wanted to emotionally eat, even though I wasn't craving, and I knew it wouldn't benefit me in any way. Of course, I stuck to the plan and avoided all temptation. That is, until I went to Target and strolled by all the discounted Easter candy...now that was a little bit of a struggle. Mostly because I saw those damn Cadbury eggs! But no worries, I got out of there and I didn't get off track once :)

vegan breakfast

This was my gorgeous fruit plate this morning! I was a little confused because in the beginning of this phase the overview says you'll be eating fruit for breakfast everyday...but this morning's breakfast had mashed chickpeas, so I opted for fruit instead. I've been doing this for my breakfasts and I always feel awesome, and I'm staying within this phase's guidelines so I'm all good!

vegan lunch

Lunch was a Microgreen salad with a new batch of Miso dressing, and I added heirloom baby tomatoes and cucumber to this one--yum!!

plant protein

Also with lunch, I had the rest of the pinto beans dish! I had to sub quinoa for brown rice since it wasn't prepped and I was pressed for time, but super delicious!

Between lunch and my snack of blended superfood goodness, I did P90X3 Yoga on Beachbody on Demand. I am loving all these classes! I have never done a Tony Horton workout (except live) and I was so impressed! 30 minutes of yogi bliss ;) It was a fast paced class, so you don't get bored or hold the poses for too long, lol!

vegan dinner

Part of my dinner: Roasted Asparagus with Slivered Almonds! I had a smaller portion of this dish on the 3 Day Refresh and I'm a big fan! I like the heads of asparagus more than the whole spear, so I didn't really eat the bottoms, but the almonds are so delicious with this! It's super easy, and you just bake the asparagus drizzled in 1 tbsp olive oil for about 25 minutes!

Part 2 of dinner was Roasted Red Pepper Bisque. I was super excited to try this because it's insanely easy to make. Basically, I boiled a chopped sweet potato, grilled 1/4 red asparagus (it would help if you use a BBQ or gas stove top), added miso paste, olive oil, ginger root, and water into my Nutri bullet and pureed it into soup form! But, I was a little disappointed. I think I needed to add more water since it was pretty thick, and the ginger was very overpowering, so it was hard to eat but I did it anyways!

*Tip for today: Try to avoid temptation wherever you go. If you are grocery shopping, stick to the outer perimeter of the store, mainly in the produce section and refrigerator (there's not much to tempt you there). Also, if you are just shopping, reward yourself with an item of clothing, workout gear, a cute water bottle to fill all your distilled water into, instead of binging on food that will make you feel horrible after you eat it!

I can't believe tomorrow is already day 10! I also recommend staying as busy as possible, but taking the time to go for a walk, get outside, and do a yoga or stretch class :)
