Day 13 of the Ultimate Reset

Day 13 of the Ultimate Reset went really well! I've basically got all the times figured out in my head by now of when I need to take my supplements and how long in between.

Breakfast was my fruit plate with: blackberries, blueberries, raspberries, strawberries, and honeydew. Of course, this was a very refreshing and delicious way to start my day! :)

Lunch was my Microgreen salad with field greens, some spinach, broccoli, carrots, baby heirloom tomatoes, cucumber, and red bell pepper. I had my miso dressing on top! This always fills me up and I love it!

In between lunch and dinner, I did PiYo: Define Lower which as you probably know by now, is one of my all-time favorite low impact workout classes! I felt so amazing afterward, and had my snack of Chocolate Vegan Shakeology and a green apple :)


Dinner was different tonight! It took a little while to prep: it was Acorn Squash with Garlic-Tahini Filling and a side of steamed broccoli. It was supposed to be Kabocha squash but Whole Foods didn't have that and this is on the substitution list. First I sliced it into quarters (the serving size is 1/4 and you need another 1/4 for tomorrow).

After slicing them, I made the Tahini sauce, which was: 4 tbsp sesame tahini, 2 tsp miso paste, 1 tsp clove garlic, and 2 tsp extra virgin olive oil. I actually doubled the recipe so my boyfriend could have it too, and I blended the sauce in my nutribullet.

I then put even amounts of the sauce on each of the quarters, and put them in the oven at 400 degrees for a little over 30 min (time may vary).

I was really excited to try this, and the first bite was good, but the Tahini flavor was super strong. I'm not sure if it was because I doubled the recipe, but I recommend doing a smaller serving of that. The squash was delicious though, especially mixed with the plain broccoli. 

All in all, I stayed strong today, and I'm looking forward to my last day of Phase 2 tomorrow!
