Day 3 of the Ultimate Reset

Day 3 of any cleanse is always known to be the hardest.
Today, however, was not that difficult! I had some great new meals to make, I got my exercise in, and I felt super productive with a good amount of energy! :)

Breakfast this morning was a delicious fruit plate! I modified a bit and had my Chocolate Vegan Shakeology blended with just 1 cup distilled water. I cut down on the fruit allowed so I could have this. My fruit plate was fresh papaya, blackberries, strawberries, and 1 tsp shredded coconut--so refreshing and a great way to start the day!!

I made sure to take my supplements at the right times (using a timer on my phone is SO helpful!), and I actually prepped my lunch in the morning. The Lentil Lime salad actually took a while to make because you are supposed to marinate it for at least 2 hours before serving. I did that in the morning and doubled it so I can have it tomorrow too.

I had my giant Microgreen Salad and added some broccoli to it. Tip: if you don't like raw broccoli, chop it very finely so it kind of just blends in with everything else! I had my Miso dressing on top that I had made in bulk, and my lentil lime salad on the side! I actually ended up putting the lentils in my salad which helped because I wasn't a big fan of it.

I am really enjoying these lunch-time salads though! They're GIANT, so filling, but you feel amazing after! I added cucumber and cherry tomatoes which were so delicious in this one!

For a snack, I had a medium green apple and 15 raw almonds again. I prepped dinner in between meals because the cucumber salad also is supposed to marinate for at least an hour. I did PiYo: Definer Lower after I prepped, and I felt AMAZING! I love how my body feels every time I do this class!

Ok so, I didn't have the correct tempeh for dinner (it was supposed to be smokey) so this was super bland. And, I didn't use seaweed to make this into sushi. However, I had my serving of carrots, brown rice, and I mashed the avocado on top of the tempeh to give it flavor! Still, very filling and there were two more parts to dinner!

Miso soup is growing on me, but next time I need to buy green onion to put on top!

ultimate reset

I'm not a fan of cucumbers, but this was pretty good! Cucumber salad with toasted sesame seeds--the taste of the toasted seeds totally made this dish. I'm actually starting to like cucumber because it's in so many meals and it's very hydrating :)
