Day 6 of the Ultimate Reset

Day 6 of the Ultimate Reset went well!! For Breakfast, I had my usual Fruit Plate minus the coconut and 1 scoop Chocolate Vegan Shakeology blended with distilled water. 

I made sure to take all my supplements at the right time (the supplement schedule is so handy to take with you!), and I'm drinking, on average, about 2 gallons of distilled water a day! I know, it's crazy but I'm always thirsty and I've always drank a lot of water, lol! Plus, you use it to cook.

For lunch, I decided to double the Microgreen salads and make one for my boyfriend too! He used his own dressing, but I just had this instead of adding a quinoa salad as well. It's seriously so much food.

I decided to have a different snack today because I'm out of raw almonds! I am obsessed with the green apples from Whole Foods right now--they're incredibly crisp and the perfect size! So I chopped one up and had it with real Almond Butter (from Trader Joes), unsalted.

You can have an entire tablespoon, which is an amazing amount and really fills you up!

In between my snack and dinner, I did a Beachbody on Demand workout from Insanity: The Asylum. I did the Relief workout which was absolutely amazing! It was 25 minutes of stretching bliss and I'm so glad I put it in my workout calendar! I am so excited that I can use all these workouts and try different programs whenever I want--straight from my computer in my living room! :)

Dinner was different tonight. I've never made Zucchini-Cashew soup, but this was pretty interesting! It was also SUPER easy to make! You just soak 17 raw cashews in 1/2 cup water for an hour. Then you boil 1 cup of water, add the zucchini for a few minutes, and then put all of this in a blender (I use my nutri bullet for everything). I've used cashews as a cheese substitute before, but never like this in a soup. You can serve it hot or cold, and I opted for hot :)

easy vegetarian recipe

I didn't have all the veggies for the Roasted Root Medley tonight (will have to get those to make tomorrow!), so I decided to use the quinoa I didn't have at lunch to make that delicious veggie stir fry again! Can you blame me? Lol but I will definitely be making the medley tomorrow with new veggies instead of the tempeh dinner that is planned.

Overall, great day and I have lots of energy still!
