Tofu Stuffed Bell Peppers

Tofu Stuffed Bell Peppers--21 Day Fix Approved!

21 Day Fix Vegetarian Recipe

I made this amazing dish the other night and I'm so proud of it! Thanks to my portion control, delicious cook book made by the creator of 21 Day Fix/Extreme, Autumn Calabrese, I recreated this recipe to make it vegan :)

It originally calls for chicken, but I substituted tofu instead.

Prep time: 10 min
Cook time: 40 min

Servings: 8 (1/2 pepper each): 1 green, 1 yellow, 1 red, 1/2 blue

-4 medium orange bell peppers (cut in half, seeds removed)
-2 tsp olive oil
-1 medium onion, chopped
-2 cloves minced garlic
-1 package extra firm tofu, drained, and chopped into cubes
-1 tsp chili powder
-1tsp cumin
-1 cup tomato sauce (I used Engine 2 Red Bell Pepper)
-2 cups cooked quinoa (I didn't factor this into the prep time since I already had a giant portion of it from the week)
-1 cup canned black beans
-1 cup corn (I heat it up in the microwave--it was frozen)
-1 cup vegan cheese
-Sea Salt, Black Pepper, Hot Sauce to taste/optional

orange bell peppers

1. Preheat oven to 375
2. Wash orange bell peppers, cut in half, put them skin down in a large baking dish. For this recipe, I only used 2 bell peppers to keep them fresh for longer.
3. Heat oil in skillet over medium heat and add the chopped onion for about 4 minutes.
4. Add garlic, stir together for about a minute.
5. Add your prepped tofu (make sure you have it drained as much as possible), chili powder, cumin, and salt; cook to your liking (I did about 6-8 minutes to make sure the tofu was browned).

6. Add the cup of tomato sauce, along with the quinoa, black beans, and corn. Reduce heat to medium-low, cook and stir for about 5 minutes. For me, I had already made the Quinoa and Black Bean salad from Fixate for a side dish throughout the week. Therefore, my stuffing already had some chopped bell pepper in it. I just used it for the filling since it's basically the same recipe!
7. Add a heaping 1/2 cup of this mixture with the tofu to each pepper half.

8. Cover with foil and bake for 35 minutes, or until peppers are tender. Then remove the foil.
9. Top each pepper with vegan cheese and bake for 3 more minutes, uncovered (or until it's melted).

10. Serve sprinkled with hot sauce!

Body Beast and CIZE Hybrid Workout Calendar

I'm so excited to announce my new hybrid workout schedule for the next 60 days!! I've been waiting for the program CIZE (by Shaun T, creator of Insanity and Max 30), to come out for months now! It's finally here and I've been thinking I need to make a major change.

I've owned the program Body Beast for a while now, and this program is entirely weight lifting. I got my best results when I was doing Insanity Max: 30 and Les Mills Pump, which is a ton of intense cardio and lifting. However, I want to push myself out of my comfort zone even further. What better way to do that than incorporating two of the most opposite programs out there?!

CIZE is all about learning how to dance--literally anyone can do it. I was a tap/jazz dancer growing up, but when it comes to the dance floor (unless it's line dancing), I have NO rhythm. Like, it's sad.

SO, this is a challenge for me--but one I've accepted and fallen in love with! I've done a sneak peek of this program twice, and I mainly loved it because of Shaun T's energy. Last night I was doing the first class and I was sweating SO much, but smiling the entire time. You really don't feel like your'e working out at all, you just feel like you're dancing. What's great about this program is that everything is broken down for you, so you work up to a full 1 minute dance at the end. The choreography is taught in steps, which is where you get in your cardio (and definitely abs!!). At the end of every workout, you "Cize it up," and get your dance on to a popular song! AND you're in the comfort of your own home so you can go totally all out, lol! ;)

Cize Hybrid Schedule

While CIZE is the End of Exercize, Body Beast is the complete opposite. You are lifting weights the entire time. Sagi is the creator, a two-time "Mr. Israel," and beast of a bodybuilder--pun intended.
There is some equipment needed for this program, but there is one dude on screen doing the workout with limited equipment, which is what I'll be following. Instead of a bench, I'm using a stability ball. Instead of an EZ curl bar, I'm using dumbbells. I do have a pull-up bar I'll be using as well. I'll be going up in weights since you really want to challenge yourself in this. I absolutely love lifting weights and saw great results with the 21 Day Fix Extreme, so I know I'll see incredible progress with this program.

I'm combining the two because:
1. CIZE is brand new and I've been wanting to try it for a while now
2. I've been talking to several people who completed Body Beast and got extremely toned--like bikini  comp ready!
3. I love cardio, and I didn't want to just focus on one program--I get bored easily and thought I could have my Shaun T fix, lol!

I took my progress pictures today, and I'll be sharing my stats with you all weekly! :) I'm also following the 21 Day Fix portion control containers to keep my nutrition on track. I have a plant-based lifestyle, so I'll be focusing on making sure I have enough of each food group to keep me muscle/dance ready!! ;)

My Top 10 Steps to Gaining Self Esteem

"Owning our story and loving ourselves through that process is the bravest thing that we'll ever do."

Do you know how incredibly powerful YOUR story is? We cannot change the past, but we can learn from it, own what makes us who we are, and spread that like wildfire.

I saw this post on social media that this extremely brave girl posted regarding her body image and how what you wear does not define nor justify anything that is said about or happens to you. It broke my heart knowing that women are still judged everywhere for what they wear (she was wearing a sports bra and shorts btw), even though our society is obsessed with objectification everywhere we go. Movies, billboards, ads, social media...

I was a feminist studies major with a concentration on sexuality studies, and as a feminist and coach, I feel the urge to always tell ANY BODY that your story is special, you are so important, you are on this Earth for a reason, and you are brave.

Own your story, share it with power and confidence, be vulnerable, wear whatever the hell you want, and boost your self esteem by spreading body positivity wherever you go <3

Here are my top 10 steps to gaining self-esteem (comment below if they help!):

1. Know Yourself and don't try to be anyone else. That will bring you down. "Sometimes I pretend to be normal. But it gets boring, So I go back to being me." <3

2. Find and Understand what makes you feel HAPPY! If you ever get down on yourself, immediately do those things!

3. Recognize your triggers, what gets you down, and find out why that happens.

4. Make crazy huge goals for yourself--I recommend making a dream board (but not with fake airbrushed people) with inspirational quotes, travel, workout clothes, etc!

5. Make deep connections--develop trusting relationships with people that LIFT you up :)

6. When you need help, ask. There's no shame in taking care of yourself and seeking answers.

7. Stand up for what you believe in. Own it, share it, and be too powerful and confident in yourself to stop.

8. Help someone in need. This is not only generous, but it also makes you realize your own worth and how you can help others even while working on yourself.

9. Have a mantra. Write it down. Journal, and reflect back on anything good that has happened to you THAT day. Thinking happy thoughts is great--writing them down and going back to them is even better.

10. Take care of yourself. Get out in nature, travel when you can, laugh often, exercise, breathe fresh air, do some yoga, and invite those friends to participate in good health with you.
