Tofu Stuffed Bell Peppers

Tofu Stuffed Bell Peppers--21 Day Fix Approved!

21 Day Fix Vegetarian Recipe


I made this amazing dish the other night and I'm so proud of it! Thanks to my portion control, delicious cook book made by the creator of 21 Day Fix/Extreme, Autumn Calabrese, I recreated this recipe to make it vegan :)

It originally calls for chicken, but I substituted tofu instead.

Prep time: 10 min
Cook time: 40 min

Servings: 8 (1/2 pepper each): 1 green, 1 yellow, 1 red, 1/2 blue

Ingredients:

-4 medium orange bell peppers (cut in half, seeds removed)
-2 tsp olive oil
-1 medium onion, chopped
-2 cloves minced garlic
-1 package extra firm tofu, drained, and chopped into cubes
-1 tsp chili powder
-1tsp cumin
-1 cup tomato sauce (I used Engine 2 Red Bell Pepper)
-2 cups cooked quinoa (I didn't factor this into the prep time since I already had a giant portion of it from the week)
-1 cup canned black beans
-1 cup corn (I heat it up in the microwave--it was frozen)
-1 cup vegan cheese
-Sea Salt, Black Pepper, Hot Sauce to taste/optional

1. Preheat oven to 375 
2. Wash orange bell peppers, cut in half, put them skin down in a large baking dish. For this recipe, I only used 2 bell peppers to keep them fresh for longer.
3. Heat oil in skillet over medium heat and add the chopped onion for about 4 minutes.
4. Add garlic, stir together for about a minute.
5. Add your prepped tofu (make sure you have it drained as much as possible), chili powder, cumin, and salt; cook to your liking (I did about 6-8 minutes to make sure the tofu was browned).

6. Add the cup of tomato sauce, along with the quinoa, black beans, and corn. Reduce heat to medium-low, cook and stir for about 5 minutes. For me, I had already made the Quinoa and Black Bean salad from Fixate for a side dish throughout the week. Therefore, my stuffing already had some chopped bell pepper in it. I just used it for the filling since it's basically the same recipe!
7. Add a heaping 1/2 cup of this mixture with the tofu to each pepper half.

8. Cover with foil and bake for 35 minutes, or until peppers are tender. Then remove the foil.
9. Top each pepper with vegan cheese and bake for 3 more minutes, uncovered (or until it's melted).

10. Serve sprinkled with hot sauce!
