Tofu Fajita Recipe

Tofu Recipe

Tofu Fajitas!! These were SO delicious!! 

I just made up my own recipe, but you can portion everything out (I use simple color coded containers for each food group based on the 21 Day Fix program). 

What you need: 

-Tortilla (I used the Flat Out High Fiber\Protein multi grain ones with low carbs) 
-Tofu (I use extra firm tofu that's already cubed--Make sure you drain it before you cook it on the stove with portioned out oil) 
-1 Orange bell pepper, cut fajita style 
-3/4 yellow onion, cut the same way (cook the peppers and onion together with the spices below)
-1 package of meatless crumbles, Mexican style (I made my own taco seasoning below)
-Several extra spicy jalapeños, chopped 
-1 can reduced sodium black beans (add to the crumbles once they've cooked) 
*Optional: guac/avocado and hot sauce :)

I made my own taco seasoning to put on the tofu before I cooked it, along with in the veggie crumbles with the black beans. I used chili powder, cayenne, and garlic powder. 

The tofu always tastes better when you season it since it takes on the flavor of what you're cooking it with! Slap it all together and enjoy!! This took little prep time, was absolutely delicious, healthy, and perfect for kids or omnivores! :)

It made about 4 servings, but I'll definitely buy more veggies for next time!
