Easy Vegan Sushi Recipe


Recently I re-started athe 21 Day Ultimate Reset Cleanse, one that I have done before and completely changed my life. I am doing this NON-STARVATION cleanse 100% vegan (of course), with fruits and vegetables. I will not be starving myself, I will NOT only be eating broth, and I will not feel the typical cleanse symptoms of low energy and being light-headed--it's pretty awesome actually :)

This recipe is great for sushi lovers who may not have a vegan option when eating sushi at a restaurant. If you're planning on doing the Ultimate Reset, you'll love how easy it is to make this simple vegan dinner while still cleansing!

What You Need:
- 1/2 tsp. extra virgin olive oil
- 1 strip smoky tempeh strips (Lightlife brand is what I use)
- 1 sheet nori seaweed
- 1/3 cup cooked brown rice
- 1/4 medium avocado sliced
- 1/4 medium carrot, cut into matchstick sized pieces
- 1/4 cucumber, cut into thin strips

To Make:
1. Heat oil in large skillet over medium heat, then add tempeh
2. Stir frequently for 2 to 3 minutes or until crisp.
3. Place seaweed on cutting board, top with rice covering half of it lengthwise
4. Top the rice with tempeh, avocado, carrot, and cucumber.
5. Roll up from the bottom, being careful not to tear the nori.
6. Wet the end of the seaweed to seal shut, cut into six slices.

It's only been a few days of my cleanse so far and I am loving it! I never thought you could cleanse and be this full of energy but it IS possible! If you are considering trying the 21 Day Ultimate Reset and would like an accountability partner, I would love to be there to guide you!
