Simple Coconut Quinoa Curry Recipe

This vegan curry recipe is one of my absolute FAVES!! Yes, it's vegan, but it's also omnivore boyfriend approved! ;)

If you have about 30 minutes to prepare a dish with simple items you can pick up from most grocery stores, this is a delish recipe to make for your fam, or meal prep for the week!

What you Need:

-1 cup uncooked quinoa
-1 tbsp coconut oil
-1 small white onion, diced
-2 cloves minced garlic (or more, go crazy!)
-3/4 cup broccoli, chopped 
-1 red bell pepper, chopped
-1 can chickpeas, drained
-1/2 cup diced carrots
-1/4 cup diced tomato
-1/3 cup chopped snow peas (in half)
-1 tbsp curry powder
-cayenne pepper (to taste...or lots of it!)
-1 can light coconut milk (8 oz)
-1 cup veggie broth

Step 1: Begin by cooking the quinoa--make more if you like to have quinoa in bulk for the week (like I do!). Set aside.

Step 2: Chop all the veggies, and get creative! You can definitely improvise and add more veggies if you'd like. This can be a great recipe to make when you have a ton of leftover veggies to use up! :)

Step 3: In a large frying pan or sauce pan, use medium heat and add 1 tbsp coconut oil. Add the onion, garlic, carrot, broccoli, and a pinch of sea salt. Cook and stir until veggies soften (about 5-7 min).

Step 4: Add the curry powder, cayenne, veggie broth, and coconut milk. Stir. Then add in washed chickpeas, and if you happen to have leftover sweet potatoes, add those too! ;)
Bring to a simmer, then reduce heat slightly, stirring randomly for about 10 minutes.

Step 5: Add in the snow peas and tomatoes, stir for about 5 minutes (you don't want them to overcook). I added a bit more sea salt, and some hot sauce for a kick!

Believe in Yourself FIRST!

These pictures have significant meaning to me.
1 year ago, on the left, I arrived to the biggest coach event of the year quite down on myself--I wasn't where I wanted to be physically, and I didn't accomplish some pretty big goals in my business.
Fast forward to this year, and my team and I not only accomplished those big goals, but I am well over 10 pounds lighter, and each pound represents the willpower, vegan nutrition, hard work, tears, and motivation to just be better. I am the example for my team, for my social media following, for my friends, my family, and mySELF. If I can become the best version of myself, and go from vegetarian to vegan, low self esteem to confident, covering up to wearing a crop top, not hitting goals to crushing them, and having my team come with me this year....YOU can.

I'm not a special snowflake. What is the main difference here? Hard freaking work. Not just with my business and my nutrition and workouts. With my MINDSET. If you are constantly flexing that personal growth muscle and not just your portions and bicep curls, you truly CAN accomplish anything you set your mind to--because you BELIEVE.YOU.CAN.
Which is the first step. Believe you can and you're halfway there. It's a saying for a reason. Belief, then massive freaking action.


If you're not where you want to be physically, emotionally, financially, it's up to you to turn it around. I'm here to help, to encourage, to believe in you, but you should be your biggest fan--because it's your life, your goals, YOUR future.
