Simple Vegan Sweet Potato Hash

Sweet potato noodles?! You better believe it! My obsession with zoodles is real, but it was time to change it up! :)

This is a super simple recipe I made up, so let's dive right in so you can enjoy!


-1 package Beyond Beef "beefy" crumbles
-1 jar Engine 2 Red Bell Pepper Marinara
-1/2 white onion, chopped and sauteed with mushrooms and garlic
-1/4 container white mushrooms
-minced garlic
-pinch of chopped fresh basil
-1 container sweet potato noodles (available in Whole Foods produce section)
-cayenne pepper to taste
-Optional toppings: hot sauce, vegan parmesan, nutritional yeast

Step 1: Cook the beyond beef crumbles. I don't add any spices to this, I just sauteed in olive oil until cooked evenly through--about 5 min on medium high. You can always add spices, but if it gets too dry, add some water--be sure to use a NON stick pan!

Step 2: Open your sweet potato noodle container. I usually cook about half at a time so they cook evenly :)

Step 3: Heat 1 tbsp olive oil over medium heat and add sweet potato noodles. Stir fry for a few minutes until somewhat brown :) Repeat with second half.

Step 4: Combine the beyond beef crumbles, cooked onion and mushrooms sauteed in garlic, with all the sweet potato noodles. Stir to combine for a few minutes.

Step 5: Add a pinch of chopped fresh basil, cayenne pepper, and stir to combine.

Step 6: Add about a cup or so of the Engine 2 Marinara, turn heat down to medium low. Stir to combine for a few minutes to heat up the sauce and cook the basil further.

I divided the container up to about 3 servings--high protein, delicious, veggie packed goodness!

Step 7: Scoop a serving into a bowl, and I would recommend adding some hot sauce, nutritional yeast, and veggie parm to give it more flavor! :)

You can do the same recipe with zoodles, pasta, gluten free noodles, whatever!
