Superfood Coffee Cookie Dough Protein Bites


Do you have a sweet tooth? Maybe you're new to a vegan lifestyle and not sure how to get started with baking? Well you've come to the right place ;) 
Vegan friendly DELICIOUS and NO BAKE Superfood Coffee Cookie Dough Protein Bites. Try saying that 10 times in a row.

What you Need:

- 1 cup coconut flour (or oat flour which you can make yourself by grinding oats)
- 2 packets Cafe Latte Vegan Shakeology (this is where I get my daily dose of superfoods...this is NOT a protein powder. However, if you have some vanilla or coffee flavored clean vegan protein powder sitting around, you can try that out for this recipe! I'd recommend about 2 scoops).
- 1/4 cup cashew butter (or almond, or peanut....I think almond would be amazing to try!)
- 1/4 cup agave nectar
- 2 tsp vanilla extract
- 1 cup plant-based milk (this is a guesstimate, I used around 1 cup because it was too dry)
- 2 tbsp dark chocolate chips (I'd recommend mini ones)
- optional: sprinkles, coconut flakes, carob chips...go crazy!

**I got all these ingredients at Safeway, minus the Shakeology. Make sure you get agave nectar, not the sweetener. For my plant-based milk, I love the Coconut Almond Milk blend by Silk. 

Directions:

Step 1:

Mix together the coconut flour, Shakeology, cashew butter, agave, vanilla, and start stirring in the almond milk a little at a time (you may need more than a cup). 

Step 2:

Fold in the chocolate chips, sprinkles, and whatever else you want!

Step 3:

Use a medium sized spoon to roll balls of dough. I lined them on a parchment sheet and put them in my fridge overnight. You can also eat them right away, or freeze them so you always have a sweet treat on hand!

Vegan Chocolate Chip Muffins


Vegan muffins anyone?!
Nope, no animal products needed for delicious baked goods! ;)

I think potentially finding my wedding dress calls for some chocolately goodness!

What you need:

- 1 cup plant-based milk (I used Silk Almond Coconut blend, SO GOOD!)
- 1 tbsp apple cider vinegar
- 2 cups all purpose flour
- 1 tsp sea salt
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 cup organic sugar
- 1/3 cup canola oil
- 2 tsp vanilla extract
- 1 cup dark chocolate chips (or try carob!)

I got all of these ingredients at Safeway since they're "normal" baking ingredients! Hey, I never said they were healthy ;) This was mainly a celebration and I was bored, lol!

Let's do this!

Step 1:

Preheat your oven to 350 degrees Fahrenheit. Lay out all your ingredients so you don't have to keep going back and forth. I also recommend downloading some awesome podcasts to listen to while you bake :) Grow your mind while you grow your appetite ;)

Step 2:

Whisk your plant-based milk and apple cider vinegar together. Set aside. 

Step 3:

In a bigger bowl, add flour, salt, baking soda, baking powder, and sugar. Mix it all up.

Step 4:

Add the canola oil and vanilla to the liquid bowl and whisk.

Step 5:

Add the bowl of wet ingredients to the dry and mix until combined. I'd recommend adding a bit at a time so it doesn't go everywhere.

Step 6:

Fold in the chocolate chips!

Step 7:

Spray down 2 muffin trays. I used a mini muffin tray for my niece to have small ones, and then I used a full big muffin tray. So I can't say exactly how much this recipe yields, but it's definitely great for parties so you don't get stuck at home eating a giant tray of muffins.

Step 8:

Bake for 20 minutes. Even in 20 minutes the tops were a little brown. Let them cool and enjoy!! I'd melt some almond butter on top for extra creaminess! :D Pour a glass of almond milk and share with a friend! :)
