Superfood Coffee Cookie Dough Protein Bites

Do you have a sweet tooth? Maybe you're new to a vegan lifestyle and not sure how to get started with baking? Well you've come to the right place ;) 
Vegan friendly DELICIOUS and NO BAKE Superfood Coffee Cookie Dough Protein Bites. Try saying that 10 times in a row.

What you Need:

- 1 cup coconut flour (or oat flour which you can make yourself by grinding oats)
- 2 packets Cafe Latte Vegan Shakeology (this is where I get my daily dose of superfoods...this is NOT a protein powder. However, if you have some vanilla or coffee flavored clean vegan protein powder sitting around, you can try that out for this recipe! I'd recommend about 2 scoops).
- 1/4 cup cashew butter (or almond, or peanut....I think almond would be amazing to try!)
- 1/4 cup agave nectar
- 2 tsp vanilla extract
- 1 cup plant-based milk (this is a guesstimate, I used around 1 cup because it was too dry)
- 2 tbsp dark chocolate chips (I'd recommend mini ones)
- optional: sprinkles, coconut flakes, carob chips...go crazy!

**I got all these ingredients at Safeway, minus the Shakeology. Make sure you get agave nectar, not the sweetener. For my plant-based milk, I love the Coconut Almond Milk blend by Silk. 


Step 1:

Mix together the coconut flour, Shakeology, cashew butter, agave, vanilla, and start stirring in the almond milk a little at a time (you may need more than a cup). 

Step 2:

Fold in the chocolate chips, sprinkles, and whatever else you want!

Step 3:

Use a medium sized spoon to roll balls of dough. I lined them on a parchment sheet and put them in my fridge overnight. You can also eat them right away, or freeze them so you always have a sweet treat on hand!
