Vegan Chocolate Peanut Butter Balls


🍫5 Ingredient No-Bake Chocolate Peanut Butter Balls🍫

This was MEAL PLAN APPROVED and I can have 4 of these bad boys on my 80 day program right now.
I am actually in SHOCK at how amazing they are (meal plan deets on my IG story: @LaurenMcHugh_14)

🌱What you need🌱

-1 cup all natural peanut butter
-1 tbsp cornstarch
-3/4 cup coconut flour
-2 tbsp pure maple syrup
-8 oz semisweet chocolate, 62% cocoa or higher, melted (I used chocolate chips)


Step 1:
Line a baking sheet with parchment paper and get out a medium bowl.

Step 2:
Combine peanut butter, cornstarch, coconut flour, and maple syrup. Stir well until the mixture forms a dough.

Step 3: 
Using a mini ice cream scoop or a spoon, shape the dough into 20ish 1 inch balls. Place a toothpick in the center of each on the baking sheet and refrigerate for 20 minutes.

Step 4: 
Microwave your chocolate in a safe dish. I did it in 30 second intervals. You can also add 2 tsp coconut oil if you'd like. Stir.

Step 5:
Remove PB balls from the fridge and dip each into the chocolate. Yes, this is messy and it's almost easier just using your hand instead of twirling the toothpicks. Return them to the sheet and coat all in chocolate where there are patches.

Step 6:
Refrigerate at least an hour and ENJOY! 1 ball = 1 serving for me!
